Air Fryer Greek Chicken with Lemon Rice, Chickpeas & Feta
Oregano-paprika chicken thighs from the air fryer over lemony jasmine rice with blistered tomatoes, chickpeas, spinach, and marinated feta.
Ingredients
Chicken
- 1.5 lb boneless skinless chicken thighs
- 1 tsp dried oregano
- 1 tsp paprika
- 1/4 tsp salt
- 1/4 tsp red pepper flakes
- 1 tbsp olive oil
Lemon rice mixture
- 3/4 cup uncooked jasmine rice
- 3/4 cup water (rice cooker)
- 1 tbsp olive oil
- 8 oz grape tomatoes, halved
- 5 garlic cloves, minced
- 1 tsp dried oregano
- 1/4 tsp salt
- 5 oz fresh spinach, chopped
- 3 tbsp fresh lemon juice
- 15 oz canned chickpeas, drained and rinsed
Feta topping
- 6 oz feta cheese, diced small
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/4 tsp dried oregano
- 2 tbsp chopped fresh oregano, plus more for garnish
Instructions
- Rinse the jasmine rice until water runs mostly clear. Add to rice cooker with the water and start on the white rice setting.
- Pat chicken thighs dry. Toss with the oregano, paprika, salt, red pepper flakes, and olive oil until evenly coated.
- Preheat air fryer to 400°F for 3 minutes.
- Lay thighs in a single layer (batch if needed). Air fry 12-14 minutes, flipping at the 7-minute mark, until 175°F internal.
- While the chicken cooks: heat olive oil in a skillet over medium. Add tomatoes and garlic, cook until tomatoes soften. Stir in oregano and salt.
- Add spinach and cook until wilted. Stir in lemon juice and the drained chickpeas; warm through.
- Fold the cooked rice into the tomato-spinach-chickpea mixture.
- In a small bowl, toss feta with olive oil, lemon juice, and oregano.
- Plate the rice mixture, top with sliced chicken and the marinated feta, garnish with fresh oregano.
